Ingredients

  • 1 box yellow cake mix
  • 1 - 4 serving size pistachio pudding
  • ½ C unsweetened shredded coconut
  • ½ C chopped pecans
  • 2 large eggs
  • ½ C canola oil

Instructions

  • Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  • Using a mixing bowl, beat together all ingredients until combined.
  • Scoop some cookie dough onto parchment paper or a baking mat lined cookie sheet.
  • Bake the cookies in the oven for 10-12 minutes or until the cookies are lightly browned.
