Low Carb Stuffed Tomatoes are a Great Snack or Appetizer

Topped with fresh dill, these cream cheese stuffed tomatoes with a hint of lemon are so easy to make, you can have them any time you want a fresh, low-carb snack.

They are perfect as a party appetizer, but also wonderful to serve the kids after school!

In fact, there are tons of ways to serve this stuffed tomatoes appetizer.

  • Perfect for any holiday gathering – fresh tomatoes make it nice for spring holidays like Easter and Mother’s Day Because the dill, cream cheese and tomatoes are green, white, and red, you could easily enjoy these at Christmas, too! (Pro tip: For Christmas, I’d totally set them on the platter in the shape of a Christmas tree or wreath!)

Personally, I think this tomato appetizer is yummy enough that it really doesn’t need a holiday or special occasion.

Even if you’re just spending the evening watching your favorite movie with your special someone, these make a great snack.

Ingredients You’ll Need

Keto stuffed tomatoes are a great bite-sized finger food for any time.

Here’s what you’ll need to make them:

1 package cream cheese
3 to 4 sprigs fresh dill, stems removed
2 tablespoons lemon juice
16 cherry tomatoes

How to Make Cream Cheese Stuffed Tomatoes

First prep your cherry tomatoes by slicing off the tops and carefully removing the insides with a small baby butter knife.

In a stand mixer or with a hand blender, combine the cream cheese, lemon juice, and fresh dill and blend well.

Place the cream cheese mixture in a piping bag or sturdy zipper bag with the end cut off.

Fill each tomato with the mixture.

You won’t believe how good this low carb Lemon Dill Tomato Appetizer is until you put it in your mouth. It’s a great make ahead recipe that’s healthy and is great for those on the keto diet. Make them any time, but especially for parties.

Ingredients
  

  • 1 pkg Cream Cheese
  • 3-4 sprigs Fresh Dill
  • 2 tablespoon Lemon Juice
  • 16 Cherry Tomatoes

Instructions
 

  • Slice off the very tip of the tomato.
    16 Cherry Tomatoes
  • Remove insides of tomato with a small baby butter knife.
  • Place cream cheese, lemon juice, and dill in a mixer or medium bowl. Using a stand mixer or a hand blender, blend well.
    1 pkg Cream Cheese, 2 tablespoon Lemon Juice, 3-4 sprigs Fresh Dill
  • Place in piping bag or ziplock and cut end. Fill each tomato with filling.
  • Top with fresh dill for a seasonal look.
