If you are looking for a scrumptious sweet treat for Mardi Gras but aren’t a big fan of King cake, you’ll want to check out this Old Fashioned Cajun Crunch Cake recipe. This moist and tantalizing cake is like a tropical celebration for your tastebuds. It’s actually similar to pineapple upside-down cake in flavor and consistency – but it’s easier to make.

Old Fashioned Cajun Crunch Cake

Your taste buds will be delighted when you take a bite of our homemade old fashioned Cajun Crunch Cake. It’s out of this world. Topped with Coconut Pecan Icing, it’s like a little bite of heaven.

Instead of whole pineapple slices, you use crushed pineapple, mixed right into the body of the cake. There is no upside-down intricacy to worry about. You simply mix your cake batter together and bake it.

While baking, mix your icing ingredients together in a saucepan and let it cook for a bit. Pour it over your cooled cake when you’re ready, let your cake set for a few minutes, and then dig in!

When to serve Cajun Crunch Cake, aka Louisiana Crunch Cake

I love how simple this cake is. The flavors of pineapple, coconut, vanilla, and pecans are sweet and refreshing. You may hear some people call it a Louisiana Crunch Cake too, so you know you can serve it for Mardi Gras.

In addition to Mardi Gras, this Old Fashioned Cajun Crunch Cake is a great addition to luau themed parties, backyard picnics and barbecues and any other time you want to share a delicious and unique dessert.

And if you’re feeling bad about eating this instead of  King Cake, feel free to hide a naked plastic baby in this Crunch cake before serving. We won’t tell.

Ingredients to make Old Fashioned Cajun Crunch Cake:

  • 2 C all purpose flour
  • 1 1/2 C granulated sugar
  • 2 TSP baking soda
  • 1 15 oz. can crushed pineapple undrained
  • 2 eggs

Ingredients to make the Coconut Pecan Icing:

  • 1 stick of unsalted butter
  • 3/4 C granulated sugar
  • 1/2 C milk
  • 1 TSP vanilla
  • 1 C shredded sweetened coconut
  • 1 C chopped pecans

How to make the Cajun Crunch Cake from scratch:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, stir flour, sugar and baking soda.
  3. Mix in pineapple and eggs until combined.
  4. Bake for 30-35 minutes.

Your fresh ingredients mix together to make a delicious moist cake. After the cake has baked and has a nice golden brown color, you’ll pour your icing on top of it. You may want to pour a second layer of icing and then let it set prior to serving.

How to make the icing:

  1. Begin making the icing while the cake is baking, heat butter, sugar and milk to a boil.
  2. Stir often.
  3. Add in vanilla, coconut and pecans then boil for about 2-3 minutes while still stirring often.
  4. Once cake is out of the oven and cooled to warm temp pour icing over the cake until completely covered.
  5. Allow cake to set for about 30 minutes to maybe an hour.
  6. Cut and enjoy!
