Ingredients you need to make the recipe
You will need one 12-24 count mini muffin pan to make these cookies.
Ingredients for Cookies:
- 1 package sugar cookie dough
- Cooking spray
- 1 can apple pie filling
- 1 tablespoon cinnamon
Ingredients for Icing:
- 4 tbsp of powdered sugar
- water to mix until smooth

Your options to make cookie cups are great! You can select your favorite pie filling and make any other flavor the same way. I particularly enjoy these with blueberry and cherry pie filling too.
I like to make these cookie cups at Christmas, but since you can substitute any pie filling, it’s a versatile recipe you can make any time of year.
How to make the apple cookie cups
- Preheat oven 375 degrees. Lightly spray a 12-24 mini muffin pan with cooking spray. Follow the instructions on the sugar cookie package for drop cookies.
- Roll dough into small balls. Place into muffin pan. We used dough that was cut into each cookie size and just rolled each cookie size into a ball.
- Bake for 10 minutes. Immediately remove from oven and press a shot glass into the cookie to make the opening. We sprayed the shot glass with cooking oil every few cups.
- Place cookie cups on a cooling rack and let cool.
- Fill the cups with apple pie filling and top with cinnamon.
- Drizzle with icing if desired.
To make the icing:
Add a bit of water to the powdered sugar and stir. Add water a bit at a time until it reaches your preferred consistency. If you like it thick, use less water. If you like your icing thing, use a bit more.
