Icebox cakes are what I turn to when I want a sweet treat to beat the heat.

During the summer, I like to avoid using my oven as often as possible.

Where I live, it stays around 100 degrees for about 6 months each year.

So finding great desserts to please my family and guests that don’t mean turning on the oven is just what I need.

What is an icebox cake?

Most simply, an icebox cake is a cake served cold or frozen.

For a long time, I thought that an icebox cake meant exclusively that it was a no-bake recipe.

I recently learned that not all icebox cakes are no-bake.

There are some creative cooks out there who are whipping up some great new poke style icebox cakes and other ways to put a new twist on a classic.

Since I’m planning our annual back yard barbecue soon, I wanted to find some great recipes for a great summertime dessert. And they are easy to make and will please the family.
